Gringo Tacos (for the enjoyment of Epigramman and others)
At the request of one of the best Hubbers I know, Epigramman, here is my recipe for gringo tacos. If you're not following Epigramman, you should be.
Gringo Tacos: an Introduction
My family is very white. My mom's side is English and my dad's side, Scottish and Dutch. It's hard to get much whiter then our family. But, we grew up eating tacos, although, not with the more traditional carne asada, pork and little tiny corn tortillas. I did not discover those joys until later in life. We ate what I now call "Gringo tacos." Essentially, they are hamburgers in a bun. It's a very tasty and simple recipe. I hope you enjoy it.
*please note, you can substitute ground beef for beans If you're not a carnivorous person.
Ingredients
Salsa:
four organic roma tomatoes
1/2 large organic white onion
slice of organic lemon
tbsp honey
tbsp organic cilantro (whole leave)
1/4 jalapeno (more or less to taste)
1/4 garlic clove
Seasoning:
Garlic powder
lawry's seasoning salt
(these are both in equal amounts, enough to cver the meat and/or beans)
Tacos:
1 lb free range ground beef and/or two cans of refried beans
1/2 large white organic onion
shredded organic head lettuce
diced organic hot house tomato
chopped olives
Tillamook sour cream
ketchup
grated Tillamook cheddar or Mexican mix cheese
flour tortillas
Making Salsa
This is quick and easy if you have a food processor, but, if you don't, you cans till do it. Just remember, knives are sharp! Use a cutting board, preferably a plastic one if you want to minimize clean up. The following instructions apply if you're using the food processor. if you're not, just dice everything as much as you desire and stir well.
1. Slice each tomato into quarters. Place in food processor and dice to desired consistency(. For thicker salsa, drain tomato juice after dicing) . Remove tomatoes and place them in a bowl.
2. Slice onion half in half and put in processor along with cilantro leaves, jalapeno (you can also use a serrano), garlic clove, salt and honey. Mix well in processor to desired consistency.
3. Remove and add to the tomatoes, squeeze lemon juice and mix well.
Making Seasoning
There is no specific recipe for this, but i just use equal amounts of Garlic powder and Lawry's seasoning salt, mixed together. Use whatever amount you'd like, depending on how seasoned you want your beans and meat. If you're super lazy, you can buy Lawry's taco seasoning nad just use 1/2 -1 package
Making Tacos
1. chop onion and throw in frying pan with ground beef and/or beans.
2. While this is heating, take another frying pan and heat oil.
3. While this is cooking, shred lettuce, dice tomatoes, chop olives.
4. Drain meat, and seasoning and mix well.
5. Toss a couple tortillas in hot oil, shape and cook to desired consistency, remove and dab.
6. I layer my tacos as such: ketchup, beef, cheese, salsa, ketchup, lettuce, olives, sour cream.
7. I then eat and enjoy.

My Dad was a GRINGO and a self proclaimed Tejano (Texan) He was actually from the Buckeye State - Ohio. My mom is from Mexico and that makes me a true blue Mexican American. I have lineage to the American Revolution and God only knows what my ancestors where up to South of the Border - lol. Well, didn't mean to offer such a long bio - just found this to be an interesting connection. Thanks for the recipe!

...well it's a honor and a thrill Sir Karaoke Guy and this will be posted to my Facebook page with a direct link back here so we can both encourage a nation of taco eaters - love your wit and charm in the introduction - and this is a hall of fame recipe hub if there ever was one - I make some pretty good HONEY GARLIC chili - with liquid honey and raw chopped garlic and tomato sauce, chili seasoning, chick peas, corn, red kidney beans, romano beans and be liberal with the hot sauce while cooking it.

My wife is Latina, and my elderly mother-in-law, who lives with us, is (or was) a superb Mexican cook. In fact, Barry Goldwater used to send his airplane to Flagstaff each Christmas to pick up a few dozen of her tamales.
She got a real kick out of your taco recipe, and even said that it sounds good!
